Cork & Fork: Seafood Pairings

It's summertime, and we are totally into seafood right now! I'm sharing some of my favorite dishes that I've made at home, and pairing them with wines I love. The wines that I'm sharing can be found at Trader Joe's and the price point is very affordable - less than $10! I am featuring a Rose and Prosecco, these wines will totally blow you away, and pair perfectly with your seafood dish!

 

Pan Seared Scallops with Wild Mushroom Risotto and Broccolini

Risotto is a staple in our house! So, for this dish I paired a wild mushroom risotto with salt and pepper pan-seared scallops. Also, as a garnish I sauteed broccolini with olive oil and the Everything Seasoning from Trader Joe's! This dish it G's favorite, and we paired it with a delicious Rose!

I got lucky and found this Rose at Trader Joe's for under $10. What a steal right? This wine has a pale Rose color. It is the perfect balance of spice and fruity aromas. It smells of cherry, raspberry and green peppercorn. It has some minerality and freshness to it. Also, it has the Carménère, Sauvignon, and Corvina grapes. This wine is well-structured and easy to drink.

 

Pan Seared Jumbo Lump Crab Cakes with Oven Roasted Red Potatoes & Asparagus

Crab cakes are my favorite, so why not pair it with one of my favorite bottles of bubbly?! I made jumbo lump crab cakes on a bed of arugula, paired with seasoned asparagus and oven roasted red potatoes. This dish is super light, and perfect on a warm summer day.

I love this wine, and it has been a favorite for years now. It was served at my wedding, and when my best friend had her bridal shower last summer, I brought a case of this to the event! The price point on this is fantastic, and of course I snagged it at Trader Joe's! This sparkling wine is delicate, with fruity aromas and notes of sweet almonds. There is a slight bitter finish due to the Glera grape used to structure the wine. The wine is really refreshing and light. Also, who doesn't love some bubbly?
