Recipe: Caprese Flatbread

“I always get to eat what I want because if I don't, I go insane.” - Chrissy Teigen

You all know I love a super quick meal to make at home during the work week! A delicious flatbread paired with an arugula salad are my go to dinner items, especially after a super long day.

I’ve been eliminating a lot of meat out of my diet, and this caprese flatbread is so insanely yummy, and super feeling. This meal takes less than 20 minutes to make, and you only need a few ingredients.

What you'll need:

  • Cherry Tomatoes

  • Fresh Mozzarella

  • Modena Balsamic Vinegar

  • Brown Sugar, Maple Syrup, or Honey

  • Sea Salt

  • Black Pepper Corn

  • Naan

  • Basil

Step 1: Once you are ready to make your caprese flatbread, it's time to startyour balsamic glaze. You can use any sweetener in your pantry - maple syrup, brown sugar, or honey. I prefer light brown sugar - it worked out perfectly for me! Stir the brown sugar and balsamic vinegar into a sauce pan for about 10 minutes. The mixture will begin to bind and make a perfect glaze. Taste it and ensure it has the right balance of acidity and sweet! Let it sit for 5-10 mins off the heat so it can cool down.

Pro Tip: Watch this mixture very carefully. Keep the glaze on medium heat to ensure you do not burn the mixture.

Step 2: It is time to prep your veggies for the flatbread. Begin slicing up your cherry tomatoes. I prefer mine to be sliced in halves.

Step 3: Next, Slice up your mozzarella - or you can buy them pre-sliced! Begin to place them on your naan bread, then add the tomatoes on top on the mozzarella. Place this on a pizza pan or baking sheet, and put it in the oven for 450 degrees for about 8 minutes. The flatbread will be ready when the edges are nice and crispy.

Pro Tip: Pat dry your mozzarella to remove any excess water.

Step 4: While your flatbread is in the oven, the mozzarella and tomatoes are on top of the flatbread, begin slicing up your basil. You can either use whole leaves, but I love it shredded. So take the leaves, and slice them long ways to get the nice strips of basil to add onto your flatbread once it comes out of the oven.

Step 5: When the flatbread is ready, and the mozzarella is melted perfectly, remove it from the oven. Garnish the flatbread with fresh basil, a little bit of sea salt, cracked black pepper, and the balsamic glaze.

Step 6: Slice, serve, and enjoy!
