Cast Iron Skillet Dark Chocolate Chip Cookie with Vanilla Bean Gelato & Sea Salt

Cast Iron Skillet Dark Chocolate Chip Cookie with Vanilla Bean Gelato & Sea Salt

First, mix the following ingredients together for about 30-45 seconds:

  • 1 cup of brown sugar

  • 1 cup of granulated sugar

  • 2 eggs

  • 2 sticks of softened butter

  • 1 1/2 teaspoons of vanilla

Then gradually mix in the following items into the mixture above for about 2 minutes:

  • 1 teaspoon of baking soda

  • 3 cups of all-purpose flour

  • 1 teaspoon of salt

Finally, my favorite part, adding in the chocolate chips and chopped pecans!

  • 6 ounces of dark chocolate chips

Then roll each cookie, place then on baking sheet with parchment paper, heat the oven to 375 degrees, and bake for about 10-12 minutes. 

* Pro tip, add a dash of cinnamon to the cookies, or add a handful of pecans!

Cast Iron Grilled Chimichurri Shrimp

Cast Iron Grilled Chimichurri Shrimp

Chimichurri:

  • 6 garlic cloves, peeled

  • ½ teaspoon sea salt

  • 1 cup cilantro leaves and stems

  • 1 jalapeno

  • ½ teaspoon cracked black pepper

  • 1 tablespoon apple cider vinegar

  • ½ cup extra-virgin olive oil

STEP 1: Using a food processor combine garlic, cilantro, jalapeno, cracked black pepper, sea salt, apple cider vinegar, and olive oil.

STEP 2: Blend all of the herbs and seasonings until nice and smooth - you’ll know its blending perfectly as it will immediately become very fragrant.

STEP 3: Transfer to a bowl, cover, and refrigerate for at least 2 hours.

Christmas Cookie Recipe: Cast Iron Cookie + Dessert Wine Pairing

Merry Christmas Eve everyone! This time of year is always so nice. I love spending time with my loved ones and creating special memories. During this season, I truly love creating treats for my family. This year my husband joined in on the fun, and we decided to create a Chocolate Chip & Candied Pecan Cast Iron Cookie!

This was super easy to make - instead of rolling out each individual cookie from my batter, G and I were able to toss all of the dough into a cast iron.

We were inspired by a restaurant in Ashburn, VA, and ever since my best friend and her husband took G and I to their neighborhood eatery we’ve been really inspired.

My favorite chocolate chip cookie recipe has been featured on the blog.

We used a 12 inch cast iron for this giant cookie! The cookie has a great thickness to it, and once it cooled, was super easy to cut into triangles - almost like a pizza pie.

The perfect dessert wine to pair with this decadent dessert was a Port wine from Stone Tower Winery - 2015 Wild Boar Porton. Stone Tower has one of the best port wines I’ve ever tried, and packs a punch with 17% ABV. It pairs so well with the dark chocolate chips used in this recipe.

Recipe: Candied Pecan Waffles

Candied pecan waffles, give me all of the childhood nostalgia that I love. Growing up in Mississippi, we had huge pecan trees in our front yard. It was so much fun picking pecans and cracking them in my childhood kitchen. Also, candied pecans were an absolute treat to indulge in. On may of our family trips to Louisiana, it was always a blast popping into different shops to pick some up.

Waffles are one of my absolute favorite brunch items to indulge in. When I can’t make it to an actual brunch spot, I’m making some one of my favorite waffle recipes at home. There is nothing better than sleeping in on Sunday morning, and whipping a lovely meal to share with your loved ones.

Today, I’m sharing how I make my candied pecan waffles!

Candied Pecans Recipe

What You’ll Need:

  • 1/2 teaspoon of cinnamon

  • 1 cup of (white) sugar

  • 1 teaspoon of sea salt

  • 1 pound of whole or chopped pecans

  • 1 tablespoon of water

  • 1 egg white

Step 1: Preheat the oven to 250 degrees.

Step 2: Combine sugar, cinnamon, and salt together in a bowl.

Step 3: Whisk egg white and water together in a separate bowl until frothy.

Step 4: Toss pecans in the egg white mixture, and combine sugar mixture into pecan mixture until pecans are evenly coated.

Step 5: Spread coated pecans onto a baking sheet.

Pro Tip: Use parchment paper, this will make sure that the sugar bits don’t stick to the baking sheet, and to the nuts themselves.

Step 6: Place pecans into the preheated oven.

Pro Tip: Stir the pecans every 15 minutes for 1 hour, until pecans are evenly browned, this will ensure that the pecans are evenly coated.

Buttermilk Waffles Recipe

What You’ll Need

  • 2 cups of all-purpose flour

  • 2 tablespoons of white sugar

  • 2 teaspoons of baking powder

  • 1 teaspoon of baking soda

  • 1/2 teaspoon of salt

  • 1/4 cup of melted butter

  • 2 cups of buttermilk

  • 2 eggs

  • 1 teaspoon of cinnamon

  • 1 teaspoon of vanilla extract

Step 1: Preheat your waffle iron.

Step 2: Combine all the ingredients above into a large mixing bowl. Stir until the batter is smooth and no longer has any lumps.

Step 3: Slowly pour batter into waffle iron, per iron instructions.

Pro Tip: Add in candied pecans into the batter in the iron, so your waffles can have an extra crunch! Or you can toss in cooked bacon as well - matter of fact you can totally add both!

Step 4: Remove waffles from iron when they are ready, then plate the waffles. Once the waffles are plated, top them with candied pecans, bacon bits (optional), powdered sugar, and maple syrup. Enjoy!
