Cast Iron Skillet Dark Chocolate Chip Cookie with Vanilla Bean Gelato & Sea Salt

Cast Iron Skillet Dark Chocolate Chip Cookie with Vanilla Bean Gelato & Sea Salt

First, mix the following ingredients together for about 30-45 seconds:

  • 1 cup of brown sugar

  • 1 cup of granulated sugar

  • 2 eggs

  • 2 sticks of softened butter

  • 1 1/2 teaspoons of vanilla

Then gradually mix in the following items into the mixture above for about 2 minutes:

  • 1 teaspoon of baking soda

  • 3 cups of all-purpose flour

  • 1 teaspoon of salt

Finally, my favorite part, adding in the chocolate chips and chopped pecans!

  • 6 ounces of dark chocolate chips

Then roll each cookie, place then on baking sheet with parchment paper, heat the oven to 375 degrees, and bake for about 10-12 minutes. 

* Pro tip, add a dash of cinnamon to the cookies, or add a handful of pecans!

Cast Iron Grilled Chimichurri Shrimp

Chimichurri:

  • 6 garlic cloves, peeled

  • ½ teaspoon sea salt

  • 1 cup cilantro leaves and stems

  • 1 jalapeno

  • ½ teaspoon cracked black pepper

  • 1 tablespoon apple cider vinegar

  • ½ cup extra-virgin olive oil

STEP 1: Using a food processor combine garlic, cilantro, jalapeno, cracked black pepper, sea salt, apple cider vinegar, and olive oil.

STEP 2: Blend all of the herbs and seasonings until nice and smooth - you’ll know its blending perfectly as it will immediately become very fragrant.

STEP 3: Transfer to a bowl, cover, and refrigerate for at least 2 hours.

Chimichurri Steak + Merlot Pairing

“Simple ingredients, treated with respect... put them together and you will always have a great dish.” - Jose Andres

One of my husband’s favorite dishes ever is a dry aged steak. It’s a treat when he is able to create this dish at home. For this steak, we paired it with a homemade chimichurri sauce. Chimichurri is a combination of fresh herbs and seasonings (finely chopped parsley, minced garlic, olive oil, oregano and red wine vinegar) - it truly paired wonderfully with the dry aged steak or really any grilled meat.

When selecting a wine for this dish, it was a no brainer - Merlot would be a wonderful pair. There are some wonderful Merlots on the market today, but finding one for a reasonable price, balance, and complexity can prove to be a bit challenging. Alas, I was swept off my feet with a Merlot straight from the Rutherford region in California.

Today. I am pairing a spectacular wine, 2018 Textbook Merlot with a one of a kind Dry Aged Steak entrée and it is most certainly a treat.

2018 Textbook Merlot

This merlot is absolutely stunning, and for less than $20 it was a steal. My WSET Level 2 classmate recommended this lovely bottle during my visit to our local Whole Foods, and she was incredibly right - I’d fall in love with this wine.

Here are the notes on the 2018 Textbook Merlot:

  • Oak: vanilla and chocolate

  • Black fruit: blackberry, plum, and black cherry

  • Earth: leather, hickory, and smoke

This Merlot is from California - Rutherford to be exact. The 2018 Textbook Merlot is bursting with flavor, and such a dynamic merlot for the price point. It is bold and smooth - the perfect balance. At first sip, it is soft on the palate, and dry on the finish.

I chose this wine for this dish as it was an outstanding compliment to the smoked dry aged steak. Mesquite wood was used in the smoking process, thus giving this protein a nice hearty flavor - the perfect match to this merlot pairing.

Any beef, lamb, or veal dish would compliment this wine perfectly - but this Chimichurri Steak is the optimal pairing.

Recipe: Aged To Perfection

“My favorite animal is steak.” - Fran Lebowitz

During the winter holiday, my husband began learning how to dry age steaks. G loves food shows, and learning how to make the best steaks, so he decided to take it up a notch and try this process at home.

To give you a little back story on dry aging, the technique began in the 1950s. The process allows the enzymes in the beef to naturally break down the muscle tissue. This results in improved texture and taste of the meat. The dry aging process is for the patient chef. G prefers the 45 day age, because the steak reaches it’s peak flavor.

Below G and I are sharing our experience with the dry aging process. Even though I do not eat red meat whatsoever, it’s been a cool experience watching my husband enjoy his new hobby, and I appreciate the labor of love.

Step 1: Dry Aging

  • G enjoys a good Ribeye, so he chose a rib roast from our local butcher. A Rib Roast contains the Ribeye steak.

  • Once we picked out our beef of choice, G immediately put the meat into a speciality dry aging bag. We then vacuumed sealed the bag to ensure that all the air is removed.

  • We then put it in a dedicated fridge, where the steak is placed on a wire rack and sits for 45 days. Placing the beef on a wire rack, helps moisture evaporate from all sides.
