Recipe: Garlic Parmesan Mushroom Fries

One of the things I’ve really been incorporating in my meals, is the use of more vegetables, and cutting out the carbs. If you know me on a personal level, then you know french fries are one of my favorite things. But, here lately I’ve been on a huge mushroom kick, and recently tested out a new side dish, that helps me curb my french fry craving - mushroom fries.

This super delicious snack, and it’s low carb may I add, is really simple and easy to make. You can deep fry, bake, or air fry this snack, and it truly does not disappoint. The combination of herbs and freshly grated parmesan cheese, is truly a gift.

What You’ll Need:

  • 2 portobello mushroom caps

  • 1 cup herb panko breadcrumbs

  • 1 cup all purpose flour

  • 1 tsp fresh cracked black pepper

  • 1 tsp garlic powder

  • 1 tsp rosemary

  • 1 tsp thyme

  • 1 egg

  • 1 tbsp water

  • canola oil

  • a pinch of sea salt

  • grated parmesan cheese, for garnish

  • parsley, for garnish

Instructions:

STEP 1: Preheat your deep fryer to 350 degrees.

STEP 2: Rinse off mushroom caps. Cut the stems, trim the edges, and remove the gills from the underside of the vegetable.

STEP 3: Slice mushrooms into strips to your desired width, 1/4 inch is a good rule of thumb.

STEP 4: Combine flour and seasonings: black pepper, garlic powder, rosemary, and thyme into a bowl.

STEP 5: In a separate bowl, whisk the egg and water, creating a frothy mixture.

STEP 6: Finally, in a third bowl, add panko breadcrumbs.

STEP 7: Take each mushroom slice and dredge it in seasoned flour, then egg and water mixture, and finally breadcrumbs. Continue this until each mushroom slice is evenly coated.

Pro Tip: The egg and water mixture act as the ‘glue or binder’ for the panko breadcrumbs to stick to the mushroom slice.

STEP 8: Once the cooking vessel is hot, gradually add in the breaded mushroom slices, cooking for 3-5 minutes, or until golden brown.

Pro Tip: You can cook these mushroom fries in an air fryer or oven, bake them at 425 degrees for 10-15 minutes, or until golden brown.

STEP 9: Remove mushroom fries from the oil, and put them onto a stack of paper towels, allowing them to drain any excess oil.

STEP 10: Garnish with a touch of sea salt, parsley, and freshly grated parmesan cheese. Serve and enjoy!

Spicy Garlic Aioli

  • 1 large jalapeno

  • 1 cup of mayonnaise

  • 1 tablespoon of lemon juice

  • 4 peeled cloves of garlic

  • 1 teaspoon of red wine vinegar

  • 1 teaspoon of apple cider vinegar

  • 1 teaspoon of cracked black peppercorn

  • A pinch of sea salt

STEP 1: Combine all of your ingredients into a food processor, and blend all of the items until the sauce is creamy and smooth.

Recipe: Loaded Smashed Red Potatoes

Potatoes are so extremely versatile - and loaded smashed red potatoes are one of my favorite ways to enjoy them.

This is the perfect dish to share with someone, or to enjoy solo. What I love most about this recipe is that you can change and modify it so easily. You can swap out the protein or cheese to your liking - the options endless. For this dish I used bacon, but you can easily substitute it out with chicken if you’re not a fan of pork. What You’ll Need:

  • 1 pound of baby red potatoes

  • sea salt, to taste

  • cracked black pepper, to taste

  • 1/4 cup of olive oil

  • 1/2 cup of chopped green onion

  • 1/4 cup of grated parmesan cheese

  • 6 slices of bacon, chopped and crumbled

  • sour cream (optional)


Directions:

STEP 1: Preheat oven to 425º. Place potatoes in a large pot and cover them fully in water. Season with salt.

STEP 2: Bring potatoes to a boil and boil until tender, approximately 10-15 minutes. Drain the pot, and let potatoes cool.

STEP 3: Transfer potatoes to a lined baking sheet with parchment paper. Lightly drizzle olive oil, and season with salt and pepper. Toss potatoes until totally combined with seasoning and olive oil is evenly distributed.

STEP 4: Then, smash the potatoes, and put them immediately in the oven.

Pro Tip: For smashing the potatoes, use the bottom of a drinking glass or mason jar. Also, you can use a large spoon or fork to flatten out the potatoes.

STEP 5: Bake potatoes until crispy, for about 20 to 25 minutes more. Occasionally flipping them to ensure they get crispy and are golden brown.

STEP 6: Once done, remove potatoes from the oven, and transfer them to a plate, top with cheese, bacon, green onion, and sour cream if you desire.

Recipe: Deviled Eggs + Smoked Bacon Crumble

Deviled eggs have always been a favorite for my family to enjoy during a gathering, whether it is at a backyard BBQ or during the holidays, it’s a must have. My mom taught me how to make deviled eggs when I was younger, and over the past couple of years I’ve tweaked this recipe just a little.

This new spin on a family classic has crumbled bacon on top! If you are not a huge fan of pork, feel free to omit the protein - it is just as good without it. Check out the super easy recipe below!


What You’ll Need:

  • 6 large eggs

  • 1/4 of mayonnaise

  • 2 teaspoons black pepper

  • 2 teaspoon of Trader Joe’s Everyday Seasoning

  • a pinch of sea salt

  • 5 pieces of thick-cut bacon, for garnish

  • smoked paprika, for garnish

  • red pepper, for garnish

Instructions:

STEP 1: Fry 5 pieces of thick-cut bacon in a medium-high heat pan. Once each piece has a nice sear on it, remove from pan to a stack of paper towels so excess grease can be drained. Let the bacon cool, and chop each slice into small bits.

STEP 2: Place eggs in a saucepan and cover with enough water. Ensure that your heat is on high until water begins to boil. Then turn the heat to low, and cook for an additional minute. Remove from heat and let stand for 10 minutes, then transfer eggs into a bowl of ice water.

Pro Tip: Placing your eggs into a bowl of ice water will make it much easier to remove the shell from each egg.

STEP 3: Gently crack egg shells and carefully peel under cool running water. Pat dry with paper towels. Slice the eggs in half lengthwise, and carefully remove each yolk into a medium bowl. Place the egg whites on a serving platter.

STEP 4: Mash the yolks into a crumble using a fork. Add mayonnaise, seasonings, and mix well with a spoon.

STEP 5: Evenly add teaspoons of the yolk mixture into the egg whites. Then, garnish with bacon bits, paprika, and red pepper.

Pro Tip: The red pepper garnish adds a little kick to even out the salt component from the bacon. If you are not a fan of spice, feel free to omit this option!

Recipe: Honey Chipotle Lime Shrimp

One of my favorite dishes to whip up and share is Honey Chipotle Lime Shrimp. What is so perfect about this dish is that you can pair it with literally anything: rice, salad, or any side dish you like. It is so versatile, and you can even snack on them without any accompaniment.

Below is the super easy recipe you can create at home.


What You’ll Need

  • 1 pound shrimp, peeled and deveined 

  • 3 tablespoons olive oil

  • 3 limes, juiced

  • 2 tablespoons honey

  • 1 tablespoon Trader Joe’s Chili Lime Seasoning

  • 1 tablespoon black pepper

  • 2 teaspoons red pepper flakes

  • 1/2 cup chopped parley, cilantro, or green onion for garnish

Instructions

STEP 1: Heat up your cast iron skillet with olive oil on medium to high heat.

STEP 2: Gradually add your shrimp into the heated skillet, and then include the seasonings: black pepper, chili lime, and red pepper flakes.

Pro Tip: Lightly pat dry your shrimp before adding them into the skillet. This will ensure that any excess water is removed before adding them into the cast iron. By doing this, your shrimp have a lovely sear on them when cooking.

STEP 3: Ensure your shrimp get a sear on each side. Flip them after 2-4 minutes or when you see a nice golden sear on the shrimp.

STEP 4: Lower the heat (low to medium) on your skillet, and add in lime juice and honey, delicately mixing the shrimp with the mixture. Ensure that each shrimp is evenly coated. Let the shrimp simmer in the skillet, allowing the sauce to thicken. Stir the shrimp in the cast iron to coat each shrimp with the lime and honey sauce.

Pro Tip: Putting your skillet on low to medium heat allows for the perfect caramelization for the lime and honey sauce. Having your pan on a high heat will actually burn the sauce which you do not want at all.

STEP 5: Let the shrimp cool in the skillet, and then remove to a plate. Garnish the shrimp with your favorite herbs, and cut a lime for extra flavor! Enjoy!

Recipe: Prosecco Battered Fried Shrimp

Shrimp is something I’ve always grown up eating, and truly enjoy. Anytime I’m able to create a dish with these sea creatures I’m a happy girl.

Recently, I tried a new dish at home, and opted to use a sparkling wine, Prosecco instead of beer, for a uniquely battered shrimp. I wanted a lighter approach to the batter, than the traditional beer battered option. This batter makes the shrimp feel nice and light, just like the Prosecco itself - refreshing with a touch of citrus.

  • 1 pound of large shrimp

  • 1/2 cup of flour

  • 1/2 cup of Prosecco

  • 1 teaspoon of black pepper seasoning

  • 1 tbsp of lemon pepper seasoning or chili lime seasoning

  • A pinch of sea salt

  • 1/2 teaspoon of cracked black peppercorn

  • Cooking oil of your choice - Canola, Peanut, or Vegetable

Step 1: Ensure your shrimp is thawed out if it is frozen, rinse them, and begin to line up each piece of shrimp on a stack of paper towels. You’ll want to drain any excess water out of the shrimp before dipping them into the batter and frying.

Pro Tip: The batter will not stick to wet shrimp, so make sure they are dry.

Step 2: While your shrimp is drying, begin to make your batter. Combine your flour and Prosecco, and ensure it is a nice creamy texture - similar to pancake batter! Once the batter is nice and smooth, combine all seasonings to ensure they are distributed evenly throughout the mixture.

Pro Tip: If your batter is a little too thick, and a little bit more prosecco to the batter to ensure it isn’t clumpy.

Step 3: Get your oil nice and hot! While you are waiting, begin to dip each shrimp into the batter, not going past the tail, and begin placing them into the pan/pot. It will take about 5 minutes for the shrimp to get nice and brown - keep your eye on them while they fry.

Pro Tip: Do not overcrowd the vessel, as the shrimp will not cook evenly, and the battered shrimp will stick together.

Step 4: As the shrimp are reaching their golden brown color, remove them from the oil, and place them on a stack of paper towels so they can drain any excess oil.

Step 5: Serve and enjoy!
